Family owned and operated for over 50 years, involving 4 generations.

4) Favorite Dish:
Spicy Chicken Rotini.

5) Favorite Spice:
Basil.

6) Least Favorite Flavor/Food type:
Mushy noodles.

7) Biggest food/cooking disaster:
Making 40 gallons or red sauce and forgetting the seasoning.

8) Worst flavor combination ever achieved:
If used properly it is hard to find a combination that doesn't have some redeeming value.

9) Type of music playing in the kitchen:
Operatic.

10) Most famous celebrity you've cooked for:
Kevin Garnett, Tubby Smith, Sid Hartman, Bud Grant, Walter Mondale.

11) Best cooking tip:
Subtle flavors is better than over seasoning.

12) What is one tool you can't live without in the kitchen (besides a knife):
Spatula.

13) What was the best food related advice anyone gave you?:
Always serve the best and freshest ingredients.

Spicy Chicken Rotini

Pre Cook 6 oz. of Rotini approx. 7 minutes, drain, set aside.

Pre Saute Chicken with fresh garlic salt and pepper to taste, olive oil and butter can be added for flavor, set aside.

In a saute pan add a small amount of olive oil, then slowly add 1/2 tablespoon of freshly chopped garlic, a level tablespoon of freshly chopped basil, 2 tablespoons of sundried tomatoes, add the equivalent of a 1/2 of a large fire roasted red pepper cut julienne style.

Saute 2-3 minutes, add 6 oz. of heavy cream then add parmesean to taste, slowly sautee until hot, add chicken and noodles and sautee slowly unitl it is ready.
